When I try to add Media from Disk, if I've pictures in my Documents folder I can add them. However, I can't select from Pictures folder as my Photos Library is grey out even though I've 70GB of pictures. Do I need to create a separate folder within Document purely to hold family history photos? I am relatively inexperienced with Mac procedures so forgive my ignorance.

Pictures in the Photos library are held in a complex database not useable by most other programs. You need to export any desired pictures to a folder in the documents or pictures folders. This roots media folder can be viewed and used by other programs such as Rootsmagic and Preview. Google how to do this export via the photos file menu. This media folder can be organized with subfolders inside it to group your genealogy images by families, etc.
Myself, I keep all photos in folders in Pictures and only use the Photos app to edit a picture and then export it back to the Finder folders.
