I would like to be able to sort my sources based on the date of the document information. For example if I've sourced a City Directory for the years 1920, 1922, 1925 and then 1935 and add other sources after these entries and find a City Directory entry for 1923, I would like to be able to enter the information and sort by date so that the source templates that I used for City Directory would then show 1920, 1922, 1923, 1925 and 1935.

Try putting the date in the source name, either first following identical first words:
Someplace City Directory 1920
Someplace City Directory 1922
Someplace City Directory 1923
Someplace City Directory 1925
OR:
1920 Chicago city directory
1920 Detroit city directory
ETC
That is, if you want this sort in the main sort list.
The sources for a single person or fact/event aren't sorted alphabetically. (they seem to be sorted by order of entry.)
Someplace City Directory 1920
Someplace City Directory 1922
Someplace City Directory 1923
Someplace City Directory 1925
OR:
1920 Chicago city directory
1920 Detroit city directory
ETC
That is, if you want this sort in the main sort list.
The sources for a single person or fact/event aren't sorted alphabetically. (they seem to be sorted by order of entry.)
